Zucchini Slice Bites
Delicious and moist, these zucchini slice bites are also gluten free, dairy free and nut free. Enjoy them straight from the oven or freeze for later.
Preheat oven to 200° Celsius or 180° Celsius fan forced.
Line an oblong cake pan
(335 x 230 x 45mm) with baking paper,
allowing sides to overlap tray.
Place all ingredients into a large bowl and mix with a wooden spoon.
Pour into baking tray and bake between 30-40 minutes.
FREEZE READY PREPARATION
Set aside tray to cool for 3 hours. (This will help slice to set.) Once cooled, you can remove slab from the tray. Using a very sharp knife cut into bites. Then place in an airtight container and store up to 2 months in the freezer.
Let them thaw at room temperature
Reheat in the oven or microwave
