Made with chickpeas, Pumpkin Hummus dip is a great choice when avoiding both gluten and lactose and is perfect served with Deli Dippers.
INGREDIENTS
- 1 x 400 gram can of chickpeas
(rinsed and drained)
- 500 grams of pumpkin
- 1 x clove of garlic
- 1/3 cup lemon juice
- Salt & pepper for seasoning
- Extra virgin olive oil
- Chopped fresh parsley

METHOD
Preheat oven to 200 Celsius. Line a
baking tray with non stick baking paper. Peel and chop pumpkin into small chunks. Assemble on the tray and spray with oil. Sprinkle with salt and pepper. Roast until just tender, not browned.
Let pumpkin cool, then blend together with chickpeas, garlic, parsley and lemon juice, using a food processor.
If you prefer a smoother consistency add more lemon juice or water.
Serve in a bowl and drizzle with extra virgin olive oil.
