Made with chickpeas, Beetroot Hummus dip is a great choice when avoiding both gluten and lactose and is perfect served with Deli Dippers.
INGREDIENTS
- 1 x 400 gram can of chickpeas
(rinsed and drained)
• 1x 440 gram can of whole baby beets
• 1/4 cup beetroot juice
(from baby beetroot)
• Salt & pepper for seasoning
• Extra virgin olive oil
• Chopped fresh parsley

METHOD
Drain baby beetroot, reserving some of the juice for later. Puree baby beets in a food processor until smooth.
Then add drained chickpeas, parsley,
reserved beetroot juice and blend again.
If you prefer a smoother consistency , either add more juice or water.
Season to taste. Serve in a bowl and drizzle with extra virgin olive oil.
